This is our last "normal" fasting week and then comes Meatfare Sunday the last day we can eat meat until Pascha in April. Fasting is supposed to be a time of drawing closer to God. We aren't supposed to think so much about the food and more about God. Not so for me, preparing and thinking about Lenten meals is so hard for me. I get stressed out and feel discouraged by the whole thing. I know it isn't supposed to be that way but for me it is. I need to try harder this Lenten season to plan our meals in advance and make sure that we have a lot of options.
I prepared my menu plan for the next two weeks (and already shopped--except for a few things):
Monday, 1st: corn dog muffins; chicken
Tuesday, 2nd: sandwiches; shepherd's pie (requested by girls to have "before Lent starts")
Wednesday, 3rd: fish stick; spaghetti
Thursday, 4th: chicken patties; turkey dinner
Friday, 5th: pizza rolls; tuna casserole
Saturday, 6th: leftovers; McDonald's--our last hamburgers before Lent LOL
Sunday, the 7th--Meatfare Sunday: Super Bowl Party---finger food type things
Monday, 8th: PB&J; potato soup
Tuesday, 9th: fish sticks; cabbage & pasta
Wednesday, 10th: mac/cheese; grilled cheese
Thursday, 11th: spaghetti o's; makaronapita (or phyllo-roni as my daughter calls it)
Friday, 12th: lunch ??; spaghetti
Saturday, 13th: leftovers

Menu Plan Monday

This week I did something BOLD and planned meals for TWO weeks!! WOW!! I know in my mind that I do so much better making a menu plan. I don't know why I resist. We spent a lot of money on fast food last week and I KNOW it is because I didn't make a good plan. So this last week, I sat down and made a plan for two weeks.
You might notice that there is a lack of meat in my menu. We are Greek Orthodox and are in the midst of Lent which means fasting from meat and dairy. We do allow dairy. We also eat more fish than is allowed. I could go into all the reasons but that is really between us and our spiritual Father. *grin*
Nothing fancy here...
Monday, the 16th: Tuna and Shells from Rachael Ray
Tuesday, the 17th--St Patrick's Day: Cabbage and potatoes--might try some soda bread too
Wednesday the 18th: French Toast
Thursday, the 19th: Potato soup
Friday, the 20th: Spaghetti
Saturday, the 21st: Chinese take out
Sunday, the 22nd: Pot luck at Church-corn casserole, pbj, corn salsa
Monday, the 23rd: salmon patties, mac/cheese
Tuesday, the 24th: pancakes
Wednesday, the 25th: Fish, Greek Pasta salad
Thursday, the 26th: ramen noodle stir fry
Friday, the 27th: spaghetti
Saturday, the 28th: ?? Older 3 Children will be at a Lenten Retreat so we might do something special with the remaining 5.

Menu Plan Monday

Still working out some kinks to my menu plan but so far it is working pretty well. Planning out my lunches is making a big difference in how our day goes and I actually think that I am saving a little money by doing it.
